Reporting to the Head Sommelier & Restaurant Director, you will be responsible for educating all F&B service colleagues, sourcing new products and keeping up-to-date with offers as well as the tastes of our guests and their requirements. You will control and maintain stock levels in the main cellar with 2,000 wine labels (including the first growth to smaller wineries) and in the outlet, as well as endeavor to maximize sales, identify opportunities and strive to create a wine culture in the restaurant in order to enhance revenue. You will work with our comprehensive supporting teams and structured systems which align with the standard of 5-star hotels.

Key Responsibilities

• Make recommendations to guests on appropriate wine choices on food and wine pairings
• Constantly review guest feedback and mystery shopper results, in order to plan and implement corrective action if needed, to ensure complete guest satisfaction
• Assist in controlling and monitoring wine orders and stock at par level
• Assist in creating and maintaining an up-to-date wine list of about 2,000 labels as per ARBOR’s standards after coordination with Chef de Cuisine & Executive Director of the Group on new food and beverage menu designs
• Conduct training for all F&B team members on existing and new products, as well as selling techniques and any other necessary beverage training
• Drive beverage revenue in the outlet and maintain beverage costs within budget
• Review and analyze sales to ensure stock rotation and profitability remains within targets

Qualifications & Experience Required

• To attain this position, you must have at least 2 years’ experience working in a similar luxury, high-end work environment as Sommelier or Wine Captain
• Ideally you will have extensive wine and beverage knowledge
• Good command of English & Chinese (i.e. Cantonese & Mandarin)

Candidates with less experience will be considered as Assistant Sommelier (Michelin Star Restaurant).
