Role Overview

The Head of Bakery is a vital member of the production team. Their responsibilities include ensuring product quality and making sure the team follows recipes and standards. When production issues arise, The Head of Bakery will analyse and resolve them effectively. Additionally, this role will support the R&D Team in batch scaling and recipe standardisation to prepare products for large-scale production. As the gatekeeper of quality, the Head of Bakery upholds the standards for all products in the production facility

Responsibilities:

  • Support the Production Team, ensuring an effective and high-quality production process.

  • Assist Production Director with the documenting of processes related to product production.

  • Monitor and ensure the quality of all goods produced at the facility.

  • Develop, scale, and standardise recipes for mass production.

  • Analyse production processes and implement improvements.

  • Train and mentor baking staff on techniques and best practices.

  • Work closely with the R&D Team on product development and testing.

  • Assist in the transition of new recipes from development to production.

Requirements:

  • Proven experience as a baker or in a similar role, preferably in a larger-scale artisanal bakery environment.

  • Extensive knowledge of baking techniques, particularly in sourdough artisanal bread and viennoiserie production. 

  • Excellent communication, interpersonal, and leadership skills to effectively collaborate with cross-functional stakeholders.

  • Excellent Knowledge in ‘Large Scale’ Bakery Factory Production is an advantage.

  • Strong analytical skills to troubleshoot production issues.

  • Food Hygiene and Health and Safety qualification preferred.

  • Proficiency in MS Office Suite.

  • Good Communication Skills in Written and Spoken English.

  • Spoken Cantonese and/or Mandarin an advantage.
